Apollo is the first cookbook dedicated to Frederik Bille Brahe's restaurant Apollo, located in the courtyard of Kunsthal Charlottenborg in Copenhagen.
Together with chef Yuta Kurahashi, he shares 104 recipes in Apollo's characteristic style - playful, elegant and inspired by the meeting between Danish cuisine and Japanese, French and Italian traditions.
